Dressed up Baked Potatoes

Baked Potatoes can get boring... I like a little variety.  Here is an easy way to dress them up.





Dressed up Baked Potatoes
preheat oven to 450F, Line cookie sheet with tinfoil or parchment paper

Red Potatoes, 1-2 for each person
Butter
Bacon Bits
Shredded Cheddar Cheese
Finely sliced Green Onion
Sour Cream garnish

Wash and scrub potatoes, remove any large eyes.  Prick several times with a fork and microwave until soft (when a fork inserts easily into the potato) about 3-4 minutes, depending on size of the potatoes.
Spray Pam on lined cookie sheet, place potatoes on top keeping a couple inches between each.
Using the bottom of a cup, push down on potatoes, flattening them a bit.
For each potato, brush with melted butter, sprinkle 1 tsp of bacon bits, add a couple Tbs of the shredded Cheese and top with Green onions.
Bake at 450F for about 15 minutes, until cheese is melted bubbly.
Serve with a dollop of Sour Cream.
