Creamy Lemon Bars

I had a lemon laying around so I thought I'd put it to use.  This is a creamy, lemony dessert.



Creamy Lemon Bars
1 14oz can Sweetened Condensed Milk
1/4 cup Lemon Juice
1 tsp Lemon Zest
1 cup Flour
1 cup Rolled Oats
1/2 cup Brown Sugar
1/2 cup Butter, softened
1/4 tsp Baking Soda
1/4 tsp salt

Preheat oven to 375°F, coat 8x8 baking dish with cooking spray.


Combine sweetened condensed milk, lemon juice and lemon zest, mix well and set aside.

In another bowl combine the rest of the ingredients.  Mix until crumbly.

In a 8x8 baking dish press half of the oat mixture.  Bake at 375°F for 10 minutes.

Pour the lemon mixture over baked crust.  Sprinkle the rest of the oat mixture on the lemon mixture and press lightly.  Bake at 375°F for about 20 minutes, until edges are lightly browned.

Let cool completely before cutting.
