Black Bean & Corn Salsa

I love this salsa!  There are so many flavors wrapped into one....the veggies come together so well, the spices and cilantro give it the perfect flavor, you don't even notice that it it good for you!  And it's pretty too!







Black Bean & Corn Salsa

1 15oz Can Black Beans, drained and rinsed
1 Can Corn
1 Red Pepper, diced
4 Green Scallions, thinly sliced
2 Stalks Celery, diced
1 Tomato, seeded and diced
1/4 Cup Red Onion, diced
1/4 Cup Fresh Cilantro, chopped
Dressing:
1 Tsp Cumin
1 Tsp Chili Powder
1/2 Tsp Cayenne Powder (more if you want it hotter)
1/2 Tsp Garlic Powder
Salt & Pepper to taste
4 TBS Lime Juice (fresh or bottle)
4 TBS Olive Oil
1 TBS Vinegar ( I use Red Wine Vinegar)

Combine Beans,Vegetables & Cilantro in a bowl and toss to mix.
In small bowl combine Dressing ingredients, whisk until incorporated.
Pour Dressing over veggies and toss.
Refrigerate, let salsa marinate in dressing to let the flavors of the spices come out.
Toss before serving.  I like to make it the night before.
Serve with Tortilla Chips or your favorite crackers.
